As a lover of homemade food and wine, I consider myself privileged to live in the country of Spain where with each passing year there are better and better natural products coming to market. So, this being the case I would like to reflect in our menu some of my favourites, a formula based on the relationships cultivated with the owners of local gardens and sommeliers of the best bodegas in the country. I have listened to their stories, walked their fields and empathised with all the hardships that go into producing this fine goods.
